Banana Ice Cream with Chocolate Cookie Dough

Ingredients

  • Chocolate Cookie Dough Balls:
    • 1 cup raw cashews soaked in hot water for 30 mins
    • 1/2 cup gluten free oats
    • 1/4 teaspoon salt
    • 1/2 teaspoon cinnamon
    • 3 tablespoons maple syrup
    • 1 tablespoon vanilla extract
    • 3 tsp raw cocoa powder
    • Ice Cream:
    • 3 frozen bananas
    • 2 tsp almond milk (or milk of choice)
    • 1 tsp vanilla extract

Method

  1. Mix all the cookie dough ingredients in a blender till smooth. You may need to do this in stages depending on the power of your blender.
  2. Take tbsp sizes from the mixture and roll into around 12 balls.
  3. Leave 4 balls out and put the rest in the fridge for another time. They will keep for a week.
  4. Place the frozen bananas in the blender with vanilla and blend till smooth and ice cream like.
  5. Pour or spoon ice cream between two bowls and add a few of your dough balls… Enjoy!
