Banana Pancakes

Ingredients

  • 1 Banana
  • 2 eggs
  • 1tsp coconut oil
  • Optional: Add protein powder (approx. 110 cals per 25g). I like to add chocolate protein powder to make mine chocolatey!

Method

  1. Mash up your banana in a bowl.
  2. Crack open eggs and whisk them with banana.
  3. Heat oil in a pan and then pour in mixture and fry like a pancake! Or pour in dollops and make mini pancakes.
  4. I like to top mine with berries or greek yogurt!
  5. Add 1tbsp flax seed (70 cals) for heart health and fibre
