LYB Turmeric Eggy Muffins

Portions: 12 small cupcake sized muffins Cooking Time: 20-25 mins

Ingredients

  • 5 medium eggs
  • 2 tsp turmeric
  • 1/2 onion diced
  • 1 handful chopped coriander/ herbs of choice
  • 1 clove garlic minced
  • 1 handful chopped peppers (or any left over veg you have)
  • 1 handfull broccoli chopped
  • 1 handful spinach
  • 1 pinch S&P
  • 1 tsp baking powder
  • Optional: 2 tbsp almond flour for texture

Method

  1. Grease a cupcake tin with coconut or groundnut oil and preheat oven to 200 degrees.
  2. In a bowl crack the eggs open and whisk to combine.
  3. Add in herbs, turmeric, baking powder and chopped vegetables (use any left over veg of choice, you dont have to use the ones in the recipe) then season with S&P.
  4. Spoon mixture evenly into your cupcake tin and bake for 10- 15 minutes until your muffins are bouncy to press and solidified.
