Method
- Grease a cupcake tin with coconut or groundnut oil and preheat oven to 200 degrees.
- In a bowl crack the eggs open and whisk to combine.
- Add in herbs, turmeric, baking powder and chopped vegetables (use any left over veg of choice, you dont have to use the ones in the recipe) then season with S&P.
- Spoon mixture evenly into your cupcake tin and bake for 10- 15 minutes until your muffins are bouncy to press and solidified.
