LYB Bone Broth Basics Chicken

Ingredients

  • 1 whole chicken on its carcass
  • 2 tsp Salt and Freshly Ground Black Pepper
  • 300ml apple cider vinegar
  • 500ml water (you may need more or less dependign the size of your chicken)
  • 2 sticks cellery diced
  • 1 onion diced
  • 1 bunch parsley
  • 2 bay leaves

Method

  1. Heat a large casserole dish or hot pot on the stove. Skin the chicken and place the whole carcass in the pot.
  2. Mix the apple cider vinegar with the water and pour over the chicken. Place the lid on, bring to the boil and cook for 30-35minutes.
  3. At this point you need to tear off as much chicken meat from the bones as you can and place in another dish to use later or for another dish. I use tongs and a fork to do this because the chicken is hot. Add the celery and other herbs to the water and place the bones back in the dish. Cook for another 4-6 hours. The longer you cook the more goodness you will get from the bones.
  4. Either pick out the bones with tongs or drain through a civ. I drain mine through a small civ as chicken carcasses have tiny bones that can be lethal!
  5. Let the both set in the fridge for 1-2 hours and then scrape the fat layer from the top. The broth should then be ready to add to other recipes and soups! I have bone broth most mornings mixed with chicken and herbs
