Ingredients

  • 2 tbsp pumpkin seeds
  • 2 tsp seeds of choice
  • 6 eggs
  • 600g sweet potato
  • 600g carrots
  • 4 spring onions
  • 1 tin sweet corn
  • 250g quark cheese or cottage
  • 2 tbsp ground ginger

Method

  1. Mix all ingredients together in large bowl.
  2. Use large/deep baking tray linned with baking paper.
  3. Spread and push down mixture to pack densley.
  4. Sprinkle with seeds.
  5. Cook for 45mins at 190 degrees but longer if it still looks wet.
