Sexy Salsa Steak & Chips

Ingredients

  • 1 fillet steak
  • 150g sweet potato chopped to make chips
  • 1 tsp maple syrup
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tsp chilli flakes (or fresh chilli chopped)
  • 1 tbsp lemon grass chopped
  • 1 large handful rocket
  • 2 tsp coconut oil

Method

  1. Preheat oven at 200 degrees. Place sweet potatoes in a baking tray, poor over melted coconut oil (you can also use a brush to brush on if not melted) , toss and season. Place in the oven to cook for 40 mins and toss every 10-15mins.
  2. In a bowl mix your maple, lime juice, soy, chilli and lemon grass together to make a salsa.
  3. Heat a non-stick pan and melt a dash coconut oil on medium heat. Get your steak on and sizzling for around 2-5 mins each side depending on the size and how well you like it cooked!
  4. Slash your steak a few times across the top and place onto a bed of rocket. Pour over the salsa so that it seeps into the slashes. Dish up a yummy handful of sweet potato chips and enjoy!
