LYB Chicken and Sweet potato Hotpot

Portions: 6 Cooking Time: Slow cook for 4-8 hours

Ingredients

  • 2 large sweetpotatos peeled and chunked
  • 600g chicken breast chunked
  • 1 tin tomatoes
  • 200g broccoli chopped
  • 100g mushrooms chopped
  • 100g sweetcorn
  • 1 cup cellery chopped
  • 100ml low sodium chicken stock
  • 2 tsp mixed herbs
  • 1 tsp garlic

Method

  1. Place all ingredients into a slow cooker or a hot pot and slowly cook for 6-8 hours depending on how high you temprarture you choose. If using a hotpot and oven then cook for 60 minutes at 120 degress, another 120minutes at 80 degrees and then turn the heat off and leave in the oven for another 60minutes as it the oven cools.
  2. Sprinkle over some corriander to serve and enjoy! This recipe lasts for a week in the fridge. So its a great evening meal quicky!
