Method
- Place the salmon in the freezer for around 15 minutes until cool but not frozen
- Meanwhile prepare all other ingredients by dicing the herbs, onions and pepper, whisk the egg and blend the rye bread till crumby. Place all in a bowl
- Remove the salmon from the freezer and then finely chop. Don’t blend it to make a puree as this results in a denser burger
- Mix the diced salmon with all the other ingredients and sprinkle in a dash of salt and pepper. Once mixed thoroughly, divide the mixture into 4 even patties and shape into burgers
- Heat a pan or grill to a medium heat with the coconut oil then cook the patties for 4-5 minutes each side. Meanwhile crush the avocado. You may also like to make either the lyb mayonnaise or garlic yogurt recipe to top
- Serve with salad and the avocado on top as your low carb option
