Dark Chocolate and Almond Butter Protein Cookies

Ingredients

  • 90g Oats
  • 40g Coconut Sugar (Brown Sugar can be used)
  • 40g Ground Almonds
  • 60g Chocolate Protein Powder (I used Vegan Protein!)
  • 40g Coconut Oil
  • 150ml Unsweetened Almond Milk
  • 70g Almond Butter
  • 80g Dark Chocolate

Method

  1. Preheat the oven to 180°c.
  2. Place the Oats into a blender and blend until a flour-like consistency.
  3. In a mixing bowl place the dry ingredients (ground oats, almonds, chocolate protein powder and coconut sugar) and mix thoroughly.
  4. Melt the coconut in the until a liquid consistency, but don’t let it boil!
  5. Pour the coconut oil and almond milk into the dry ingredients at the same time as adding the almond butter.
  6. Stir until thoroughly mixed.
  7. Smash the Dark Chocolate into small chip sized amounts before mixing into the dough.
  8. Line a baking tray with greaseproof paper.
  9. Roll the dough into 14-16 small balls before flattening slightly to resemble a cookie like shape.
  10. Bake for 15 mins (why not try a HIIT or AMRAP!)
  11. Leave to cool before enjoying!

The cookies will still be slightly soft when you take them out of the oven however once cooled the cookies will set to be melt in the mouth goodness with a slight crunch.
