LYB Lean Banana Protein Muffin with Peanut butter

Ingredients

  • 2 bananas
  • 2 eggs
  • 2 tbsp peanut butter
  • 30g vanilla whey protein powder
  • 1 tsp baking powder
  • 2 tsp maple syrup
  • 1/2-1 cup Almond milk depemding on how tough your mixture

Method

  1. In a blender place bananas, 1 tbsp peanutbutter, eggs, protein, syrup, and baking powder. Blend for 30 seconds then add the milk to loosen the mixture and blend again
  2. Heat the oven to 180 degrees. Evenly poor the mixture between 12 cupcake molds
  3. Bake for 20-25 minutes until risen and golden. Serve warm with a little nut butter in the middle! Yum!
