LYB Crushed Peas and Mint

Ingredients

  • 250g fresh or frozen garden peas
  • 2 tsp fresh lemon juice
  • 3 pinchs fresh parsley finley chopped
  • 6 mint leafs finley chopped
  • 2 pinch salt
  • 1 pinch pepper

Method

  1. Boil peas for 2 minutes until cooked but still crisp
  2. Drain from the hot water and then run under cold water until the peas are cool. Drain the excess water and add in all the other ingredients. Crush with a potato masher until mashed and mixed well
  3. Serve as a side to meals, with salads, as a dip, on toast or ontop of canepes. I love this with my salads!
