LYB Gingerbread Protein Loaf

Ingredients

  • 200g oats
  • 6 tsp ginger
  • 1.5tsp cinnamon
  • 2 large eggs
  • 30g chopped walnuts
  • 1 tsp baking powder
  • 60g whey vanilla protein
  • 100-150ml unsweetned almond milk

Method

  1. Preheat the oven to 200 degrees. Place oats in a blender and blend to make flour.
  2. Mix all ingredients into a bowl and add a little extra milk to loosen the mixture.
  3. Line a loaf tin and pour the mixture into the tin. Bake in the centre of the oven for 25-30minutes until you can place a knife down the middle and it comes out clean.Let the sponge cool before removing and slicing. Serve with 1 tsp almond butter or a little cottage cheese for extra taste! I use this as a super lean treat or fuel breakfast. This is why I haven’t included any sugars in the recipe. You can add maple syrup for sweetness if you prefer
