Full English Me Up

Ingredients

  • 1 large tomato
  • 1 large portobello mushroom or handful of small mushrooms
  • 2 eggs
  • 2-3 rashes of bacon

Method

  1. Cut the fat off the bacon and grill it cooked to your liking… yum nice and crisp for me!
  2. Melt a dash of coconut oil in the pan. Cut the mushrooms in half and tomato and fry them for 4- 6 minutes.
  3. Either fry the eggs or scramble them up in a separate pan or poach them in a pan of water.
  4. Serve it all up onto a big plate and tuck on in! Add some rye bread or wholegrain toast to make it your carb/refuel meal.
