Method
- Melt coconut oil in a pan on medium heat. Slice the chicken into small bits
- Place the large green leaf or tortilla in the pan to heat. In a bowl mix the yogurt, chicken, tomatoes, herbs and lemon together
- Spoon the mixture onto one side of the leaf. Slice up the cheese and place ontop.Fold the other side over and press down to allow the mixture to bind as the cheese starts to melt. After a minute flip over and cook for another minute.
- Remove it from the pan and slice in half. I serve mine with smashed avocado or guakamole and salsa and they are so yummy! Enjoy
