LYB Cottage Cheese Brekky Muffins

Ingredients

  • 1/2 cup ground almonds
  • 1/2 cup hemp seeds
  • 1/2 cup grated parmesan
  • 1/4 cup flax seed
  • 1 tsp baking powder
  • 1 cup cottage cheese
  • 1 tsp salt and pepper + herbs or spices of choice (I use 1 tsp corriander, pasley and basil)
  • 5 spring onions chopped
  • 6 beeton eggs

Method

  1. Preheat the oven to 190 degrees and line or greese a cupcake tray with coconut oil or butter
  2. In a bowl mix all of the ingredients till well combined
  3. Spoon the mixture evenly between the cup cake cases or tray and place in the oven for 25- 30 minutes until they are golden on top
  4. Remove from the oven and eat warm. Keep the rest to grab on rushed mornings. You can reheat them in the microwave or oven
