LYB Easy Chicken Curry

Portions: Serves 4 Cooking Time: 30 Minutes

Ingredients

  • 500g Chicken Breast
  • 1 Red Pepper
  • 1 Onion
  • 100g Green Beans
  • 400g Tin of Chopped Tomatoes
  • Vegetable Stock Cube 
  • 1 Tbsp Medium or Hot Curry Powder (depends how spicy you like!) 
  • 400ml Boiling Water 
  • 1 Tsp Coconut Oil

Method

  1. Slice the Chicken Breast into chunks, as even as you can roughly get them. 
  2. Chop the red pepper, onion and green beans and put to one side. 
  3. In a separate jug stir the vegetable stock cube until it has dissolved into the boiling water. 
  4. In a pan, heat the Oil till simmering before adding the chicken and turning until it is all white. 
  5. Once the chicken has begun to colour add the onions, stirring until soft. 
  6. Add the Curry Powder, Green Beans and Pepper for 3-4 minutes, stirring regularly. 
  7. At this point add the chopped tomatoes and vegetable stock, stirring regularly until boiling. 
  8. Cover and allow to simmer for 25-30 minutes until the liquid has thickened.
  9. Serve Up and Enjoy! 

I like to enjoy this recipe either with a Plate of Spinach or Bowl of Rice but you will need to adjust the macros accordingly.
