Method
- Slice the Chicken Breast into chunks, as even as you can roughly get them.
- Chop the red pepper, onion and green beans and put to one side.
- In a separate jug stir the vegetable stock cube until it has dissolved into the boiling water.
- In a pan, heat the Oil till simmering before adding the chicken and turning until it is all white.
- Once the chicken has begun to colour add the onions, stirring until soft.
- Add the Curry Powder, Green Beans and Pepper for 3-4 minutes, stirring regularly.
- At this point add the chopped tomatoes and vegetable stock, stirring regularly until boiling.
- Cover and allow to simmer for 25-30 minutes until the liquid has thickened.
- Serve Up and Enjoy!
I like to enjoy this recipe either with a Plate of Spinach or Bowl of Rice but you will need to adjust the macros accordingly.
