LYB Honey Salmon With Greens

Ingredients

  • 1 tsp honey
  • 1 tsp sesame seed oil
  • 2 cloves garlic minced
  • 1/2 fresh lemon sliced
  • 1 pinch salt
  • 400g salmon sliced into 3 fillets
  • 6 cups green vegtables (I like broccoli and corgette noodles)

Method

  1. Pre heat the oven at 180 degrees
  2. In a bowl, mix your honey, oil, garlic and S&P
  3. Put the salmon fillets on a lined oven tray and brush the mixture onto your salmon fillets
  4. squeeze over fresh lemon and place 4-6 slices of lemon on the salmon
  5. Place tray in the oven for 20 -25 minutes until the salmon is cooked then if you can grill for 3 minutes then do so for a golden top!
  6. Whilst the salmon cooks steam, boil or stir fry the greens
  7. I like to have mine with Courgette pasta (Spiralize or grate a courgette into strings then mix with my homemade tomato sauce)
