LYB Avocado & Bacon Surprise

Ingredients

  • 1 avocado
  • 1 eggs
  • 3 slices lean bacon
  • S & P sprinkle

Method

  1. Firstly poach 1 egg in boiling water for 1-2 minutes then remove and let cool on a plate
  2. Cut the Avocado in half length ways and gently scoop each half out of the shell keeping its shape. Spoon a bit of the flesh from each of the middle so that the poached egg can fit in and the two halves can put back together with no gap
  3. Once the poached egg is inside of the avocado, keep it closed by wrapping lean bacon around the middle and length ways. You mad need to slice the bacon into two to cover the whole avocado
  4. Place the wrapped avocado in a high heated pan to cook the bacon for 3-4 minutes till nice and crispy all the way around. Move avocado every 30 seconds so that all the bacon is crisp. Serve on a plate and slice in half to let the poached egg surprise be revealed!
