Method
Base:
- In a blender, blend your oats to flour and spoon into a large bowl.
- Blend the nuts and syrup and then add in the oat flour to make a stiff dough. Add a little almond milk at a time to soften.
- Press your dough into a square tin or baking tray to make a even spread. Put in the freezer for 5 minutes.
Caramel:
- Place your dates in a blender first and blend till smooth and gooey.
- Add in the coconut oil, nut butter and syrup and blend again to make a nice caramel texture.
- Spoon your caramel evenly onto your base layer and place back in the freezer for 10 minutes.
Chocolate top:
- In a bowl or mixer, mix your cocoa powder, oil and syrup to make a well blended and sauce like. Add water and stir till smooth.
- Lightly spread your chocolate sauce over the cold caramel layer and place back in the freezer for a further 20 minutes.
- When you remove your tray, the top layer should be set and ready to slice into squares or rectangles. If it is not then freeze for longer.
- Keep your slices in the fridge to nibble on when you want to!
