LYB Raw Caramel Slices

Ingredients

  • Base:
    • 4 cups gluten free oats
    • 60g cashew nuts
    • 60g almonds (or nut of choice e.g. walnuts, pecans)
    • 4 tbsp maple syrup
    • 1 cup almond milk
  • Caramel:
    • 6 tbsp coconut oil
    • 6 tbsp peanut butter (no added sugars.. whole earth is a good option)
    • 6 pitted dates
    • 4 tbsp maple syrup
    • (Dash almond milk may be needed if too thick)
  • Chocolate top:
  • 4 tbsp Raw Cocoa powder (or green and blacks coco powder)
  • 4 tbsp maple syrup
  • 4 tbsp coconut oil
  • 1/2 cup water

Method

        Base:

  1. In a blender, blend your oats to flour and spoon into a large bowl.
  2. Blend the nuts and syrup and then add in the oat flour to make a stiff dough. Add a little almond milk at a time to soften.
  3. Press your dough into a square tin or baking tray to make a even spread. Put in the freezer for 5 minutes.

        Caramel:

  1. Place your dates in a blender first and blend till smooth and gooey.
  2. Add in the coconut oil, nut butter and syrup and blend again to make a nice caramel texture.
  3. Spoon your caramel evenly onto your base layer and place back in the freezer for 10 minutes.

       Chocolate top:

  1. In a bowl or mixer, mix your cocoa powder, oil and syrup to make a well blended and sauce like. Add water and stir till smooth.
  2. Lightly spread your chocolate sauce over the cold caramel layer and place back in the freezer for a further 20 minutes.
  3. When you remove your tray, the top layer should be set and ready to slice into squares or rectangles. If it is not then freeze for longer.
  4. Keep your slices in the fridge to nibble on when you want to!
