LYB peanut butter brownies

Ingredients

  • 60g awesome vegan chocolate protein (or any chocolate plant based protein powder that tastes good)
  • 30g oats
  • 180g Greek yogurt (I use fage Uk 0%)
  • 1 large egg
  • 1tsp baking powder
  • 1 tbsp cocoa powder 100%
  • 6 pieces 70% chocolate
  • 80g coconut sugar (or natural sweetener to reduce sugars and calories)
  • 90g peanut butter

Method

  1. Preheat over to 180 degrees and line and grease a medium size cake or brownie tin or tray with a little butter or coconut oil
  2. Put all ingredients except peanut butter  and chocolate squares into a blended and blend till smooth. (LYB Coach Gabzy’s tip is to put all wet ingredients in first to make the mixture blend easier)
  3. Spoon or pour mixture into your baking tray and spread evenly. Place chocolate squares evenly around the mixture
  4. Melt the 80g of peanut butter in the microwave for 10-30secs till runny. Then pour this over the brownie batter to create a swirl effect on top
  5. Place in the centre of the oven and bake for 25 minutes (why not try doing LYB HIIT A workout whilst you wait for it to bake!)
  6. Removed and leave to completely cool for at least an hour before remover chopping into 20 even squares and removing from the tray.(another great tip is to put the brownie in the fridge for a few hours before chopping. This allows the gooeyness to set a little more)
  7. Enjoy!!!!
