LYB Salmon Burgers with healthy lime mayonnaise in a bun

Method
- Place the salmon in the freezer for around 15 minutes until cool but not frozen
- Meanwhile then whisk the 1 whole egg and blend the rye bread till crumby and place in a bowl with the coriander, onion, peppers, mint and just 2 tbsp of the lime juice.
- Remove the salmon from the freezer and then finely chop. Don’t blend it to make a puree as this results in a denser burger
- Mix the diced salmon with the other ingredients in the bowl and sprinkle a dash of salt and pepper in. Once mixed thoroughly, divide the mixture into 4 even patties and shape into burgers
- Heat a pan or grill to a medium heat with the coconut oil then cook the patties for 4-5 minutes each side
- Meanwhile make the lyb healthy mayonnaise by placing the egg yolk and mustard in a bowl and whisk. Very gradually add in the olive oil bit by bit whilst slowly stirring. Then add in the yogurt, s&p, lime juice and a dash apple cider. You can mix this in faster
- Serve the cooked burgers with wholemeal buns, lettuce leaves or salad and 1 tbsp healthy mayo ontop
