LYB Salmon Burgers with healthy lime mayonnaise in a bun

Ingredients

  • 650g salmon fillet
  • 1 egg
  • 1/2 a pepper finley chopped
  • 1/2 cup corriander chopped
  • 4 tbsp lime juice
  • 1/2 onion chopped
  • 1/2 slice rybread blended to make crumbs
  • 1/4 cup chopped walnuts
  • 2 tbsp chopped fresh mint
  • 1 tsp coconut oil
  • 4 wholemeal buns
  • 1 egg yolk
  • 1 cup fat free greek yogurt
  • 1 tsp dijon mustard
  • 1 cup olive oil
  • 1 tsp apple cider vinegar
  • 1 pinch salt and pepper
  • 1 handful lettuce leaves or salad

Method

  1. Place the salmon in the freezer for around 15 minutes until cool but not frozen
  2. Meanwhile then whisk the 1 whole egg and blend the rye bread till crumby and place in a bowl with the coriander, onion, peppers, mint and just 2 tbsp of the lime juice.
  3. Remove the salmon from the freezer and then finely chop. Don’t blend it to make a puree as this results in a denser burger
  4. Mix the diced salmon with the other ingredients in the bowl and sprinkle a dash of salt and pepper in. Once mixed thoroughly, divide the mixture into 4 even patties and shape into burgers
  5. Heat a pan or grill to a medium heat with the coconut oil then cook the patties for 4-5 minutes each side
  6. Meanwhile make the lyb healthy mayonnaise by placing the egg yolk and mustard in a bowl and whisk. Very gradually add in the olive oil bit by bit whilst slowly stirring. Then add in the yogurt, s&p, lime juice and a dash apple cider. You can mix this in faster
  7. Serve the cooked burgers with wholemeal buns, lettuce leaves or salad and 1 tbsp healthy mayo ontop
