LYB Tuna Steak with Salsa Verdi

Ingredients

  • 1-2 clove garlic minced
  • 1 handful capers
  • 1 handful gherkins pickled in sweet vinegar
  • 6-8 anchovy in garlic and olive oil
  • 2 large handfuls parsley
  • 1 bunch fresh basil , leaves picked
  • 1 handful fresh mint , leaves picked
  • 1 tablespoon Dijon mustard
  • 3 tablespoons red wine vinegar
  • 8 tablespoons really good extra virgin olive oil

Method

  1. Make your Salsa verdi: Finely chop first 7 ingredients and place in a bowl. Mix in your mustard, vinegar, oil and mix the mixture till combined. If you prefer you can use a pestle and mortar to combine the ingredients more. Place 2 tbsp over your fish or vegetables to serve.
  2. In a frying pan lightly heat your Tuna is ground nut or coconut oil for 1 minute each side on a medium heat.
  3. Place Tuna on your bed of rocket and spoon over your salsa.
