Method
- Scramble eggs in a bowl and place the crumpets in the raw egg to soak it all up for 1-2 mins
- Heat a frying pan on medium and melt the coconut oil. Place the crumpets in the pan and cook for 2 minutes each side until golden and crispy on the our side. We serve ours with spinach and tomatoes. Or for a sweet edge try blueberries and a little maple syrup. Delish!
