Pesto chicken courgette pasta

Ingredients

  • 1 chicken breast tbsp chopped sun dried tomatoes
  • 1 courgette spiralized or grated to make strings like pasta
  • 2 tablespoon homemade avocado pesto (see sauce section for recipe)

Method

  1. Preheat oven or grill at 200 degrees.
  2. Slice your chicken breast in half and place in the oven or grill to cook for 10-15 minutes depending on the size of your breast… make sure they are cooked.
  3. Mix courgette strings with the avocado pesto and sun dried tomatoes.
  4. Once chicken is ready, slice it up or pull it apart and serve on top of your pesto pasta… enjoy!
