Protein Chocolate Crispies

Portions: 8 slices Cooking Time: 10 mins cooking, 20 mins freezer

Ingredients

  • 1 heaped tbsp raw cocoa powder (found in whole food stores) or dark cocoa powder (green and blacks is a good pick)
  • 2 tbsp chocolate whey protein powder (not essential, add more coco powder instead)
  • 2 tbsp natural sweetener, maple syrup or natural honey
  • 5 blended and meted dates
  • 1 tbsp crunch organic peanut butter
  • 3 cups whole grain rice puffs (found in ‘free from’ section or whole food stores)
  • 1tbsp almond milk

Method

  1. Blend the dates, natural sweetener, almond milk together to make a gooey paste.
  2. Spoon into a pan on a low heat and mix in nut butter, coco powder and protein. Once smoothly mixed, take off the heat and mix in the puffed rice.
  3. Spoon mixture into a tray and leave to cool/set for 20 mins in the freezer or an hour in the fridge.
  4. Slice into rectangular squares and enjoy! I like to melt 85% dark chocolate and spread it on the top 😉
