Sweet Potato Walnut Muffins

Ingredients

  • 1 medium sweet potato, baked, mashed
  • 1 cup oat flour (oats blended in a blender to make flour)
  • 1/4 cup ground flaxseed
  • 1/2 cup almond meal
  • 1/4 cup whey protein (or more flour)
  • 1 cup almond milk
  • 1 egg
  • 2 tbsp macadamia oil, or any oil
  • 1/4 cup coconut palm sugar
  • 1/4 cup honey or maple syrup
  • Cinnamon and nutmeg to taste
  • 1 heaping tbsp baking powder
  • Toppings:
    • 1/4 cup chopped walnuts
    • 2 tbsp dark chocolate chunks

Method

  1. Heat oven to 200 degrees and prepare a muffin tin by wiping with oil or cooking spray.
  2. In a blender add the potato, eggs, milk, oil, and syrup and blend.
  3. In a large mixing bowl, mix the oat flour, baking powder, coconut sugar, protein, almond meal, flaxseed and cinnamon / nutmeg spices
  4. Pour the wet mixture into your large bowl and mix all together till blended well.
  5. Evenly distribute the batter between your muffin tin and top with nuts and chips.
  6. Bake for 25- 30 minutes and make sure a tooth pick goes in and out clean. Leave to cool for 10 minutes and enjoy!
