Method
- Heat oven to 200 degrees and prepare a muffin tin by wiping with oil or cooking spray.
- In a blender add the potato, eggs, milk, oil, and syrup and blend.
- In a large mixing bowl, mix the oat flour, baking powder, coconut sugar, protein, almond meal, flaxseed and cinnamon / nutmeg spices
- Pour the wet mixture into your large bowl and mix all together till blended well.
- Evenly distribute the batter between your muffin tin and top with nuts and chips.
- Bake for 25- 30 minutes and make sure a tooth pick goes in and out clean. Leave to cool for 10 minutes and enjoy!
