Heat a non-stick pan over medium high with a little coconut oil or olive oil. Add broccoli and mushrooms, and stir-fry until cooked (around 5 minutes) then remove from heat and set aside.

Combine milk, water, and quinoa in a large saucepan and bring to the boil. Reduce the heat to low and let simmer whilst constantly stirring until most of the liquid has been absorbed.

Add vegetables, cheese and the salt & pepper to the pot of quinoa and stir to combine.

Fry or grill a sunny side–up egg.

Dish up the quinoa to a bowl, then top with the egg.

I like to add some sliced avocado on top of my dish!
